Here’s every firmware version Apple has put out for the Watch7,10, organized into what’s currently signed and what isn’t. Signed means Apple’s servers will still let you restore to it today, which matters if you’re troubleshooting an issue or just want a clean reinstall. The unsigned builds are older releases that Apple has since closed off, so while they’re listed for completeness, most devices won’t be able to downgrade to them anymore. All the download links point straight to Apple’s infrastructure, not any third-party server.
